Japanese Choice Sticky Rice or Sushi rice is a white, short-grain variety of rice. These grains are very small and almost round. It is made with sugar and rice vinegar. It is used to make sushi rolls and rice balls. It contains more moisture and is stickier than usual rice. It has greater stickiness when cooked, and a firmer and chewy texture.
